The décor: Live gigantic lobsters and geoduck sit in their huge, clean spiral-shaped water tanks, ready to greet you once you exit the elevator. It’s a massive, sprawling restaurant in relaxing beiges and browns, with round tables, banquettes in clean modern lines.
The raw: With daily catches from The Philippines, the ultra fresh seafood can be swished around the bubbling broth for just seconds—a quick dunk ensures succulent perfection. You can even have it raw. Seasoned sashimi chef from Suishaya (the iconic Japanese establishment of HK’s Roaring 80s) makes sure the fish and shellfish are hygienic and immaculately prepared, so worry about overcooking, not under.
The cooked: Chilled mantis prawn, and that fish head from your sashimi platter, deep-fried and chopped into bite-sized morsels of super fluffy finger-lickin’ goodness. For dessert, try the Taiwanese-style flavored ice shavings.
