The buzz: Executive sommelier Albert Yam opened this wine bar to share his wealth of knowledge of reds, whites and everything in-between.

The décor: Illuminated wine racks showcase fine selections of wine from exotic locales—all picked based on their climate and production qualities rather than just their brand names. Brown and plum seating with black glass tables create a laidback ambiance, and upstairs, the VIP room with plush gray couches is perfect for private functions. Don’t forget to admire the owner’s awesome if slightly incongruous collection of Simpson’s action figures.

The drinks:
With over 150 varieties on offer, you will be spoiled for choice. Try the Amista Vineyard “Morningsong” Syrah 2003, which is surprisingly more Rhone Valley than New World with its tobacco, anise and Pu-erh tea tones. For a white, Albert recommends a grape varietal that he considers up-and- coming, a 2006 Riesling from BestHeim, Alsace in France. If you long for something stronger, the bartender also makes a Cosmo based on his secret recipe, as well as a range of fresh fruit cocktails.

The crowd: Wine aficionados interested in furthering their wine education, or those who want to boast they’re the only ones in Hong Kong who’ve drunk Côtes de Blaye.

The music: Classic jazz. Think Billie Holiday and soft lounge music to start the evening, then transitioning to Massive Attack once it gets late.
